<span class="Apple-style-span" style="font-size: large;">Soup...are you kidding me? </span> It's hot outside! What were you thinking? Well, you're right...it's the hottest it has ever been in a long time. The mini heat wave has us panting and staying indoors in this A.C....where it's c-c-cold. So, my body doesn't know how to react. It wants soup, so I just have to give it to her, right? I can eat soup actually anytime of year and it makes sense at a time when we are so busy running around and having fun in the sun, to dump something in the pot and call it a day. After all, we can have something cool for desert or pair it with a cool crisp salad. <br />
<br />
My grocery store had a sale on Hillshire brand smoked sausages so I had four left over, a half a bag of frozen spinach, one ear of sweet corn, and a can of white beans.<br />
<br />
Here's the recipe for<b> Spicy Sausage and Spinach Soup!</b><br />
<br />
<br />
2 TBSP EVOO<br />
One large onion chopped<br />
2 cloves garlic<br />
4 spicy smoked sausage links cut in rounds about 1/4-1/2" thick<br />
2 cans reduced sodium chicken broth<br />
1 can 15 oz white beans (I used Goya small white)<br />
1/2 bag of frozen spinach or 2 cups chopped kale, or any greens you like.<br />
Handful of chopped italian parsley<br />
Two russet potatoes, peeled and sliced in 1/4 inch rounds<br />
(any summer veggie you want to put in) I used fresh sweet corn and some matchstick carrots for a little color and a burst of sweetness. (it's delicious!)<br />
1/4 tsp of celery seed (I didn't have celery) if you do chop two stalks with leaves.<br />
1 cup water<br />
Salt and pepper to taste<br />
<br />
Saute the sausage rounds until they get a little color, add onions until transparent, add garlic, sauted softly for a few minutes. Add spinach frozen and let get soft. Then add parsley, beans, potatoes, broth, and water and any extra veggies you chose. Bring to a boil, then simmer until potatoes are soft.<br />

I say Pizza! Sure, you COULD <i>order</i> a pizza, but you don't have to if you have these three ingredients. Cheese, Sauce, and Flour Tortillas!<br />

Something most people have in the fridge nowadays are flour tortillas! Tortillas are great for wraps, tacos, burritos, and quesadillas, but they are super awesome as PIZZAS! I just saw that Goya makes tortillas, so I was curious to try them! I loved how pliable and soft they are, and they are just the right thickness. Some store bought tortillas tend to be too thin and dry. I say go for the Goya! <br />
<br />
Next is cheese, now you can use any cheese, but Kraft now has this new Mozzarella with a touch of Philadelphia cream cheese for extra creaminess. I really loved it! You can also find it in cheddar too.<br />
<br />
The sauce I used is organic, and because I have never used this brand's Pizza Sauce, I thought I would give it a try! It's very good with a nice tomatoey flavor without being too sweet.<br />

Corned beef was scary to me, I don't know why. I was afraid to make this at home... I figured I would just order at the diner! No doubt, Diner Hash is heavenly, but this IS super duper easy to make at home and you don't need loads of ingredients to accompany the corned beef. Its a stand alone type of guy! You have a loaf of that crusty Italian bread, that usually goes in a hurry, but today you have enough to carve yourself two nice inch thick slices! Wait, you have some cheese, in my case cheddar (the sharper the better I might add) What makes this grilled cheese so yummy? After all it sounds like every other normal grilled cheese that you can make. It's Flavored Butter. Yes, a parsley garlic butter! Oh my! I ate it so let me tell you 1) yes, it's delicious and 2) it's super easy.<br />

1 small clove garlic minced fine</div>

I wanted to eat healthier, so I searched for something that would be substantial with coffee or tea, and would give me some energy to boot! These muffins are not too sweet, which I like. You may add a little more sugar if you would want, but to keep the calories down, I really wouldn't. These are healthy remember? Time for me to try it! Well, it's just scrumptious. Light and fluffy. ( I omitted lots of fat, most of the time coffee cake uses a lot of butter... I used half the amount. Also, I saved about 1/2 cup of sugar in this recipe... I really don't know how many calories I saved but it's a lot. </div>

I really love this because I get to try so many different dishes and dips of my many talented friends. So, needless to say, I have leftovers galore. It's<b> Football Sunday</b>, so I have to make something quick and easy. My leftovers are mediterranean chicken, rice with pigeon peas, and stewed red beans with pumpkin. This in itself is a meal. So, I won't be improvising today but I will give you the recipe to my <b>Rice and Pigeon Peas</b>, or Arroz with Gandules as I call it. My friends always ask how to make it. I make it a variety of ways, and everyone makes it a little different this way uses jasmine rice, which cooks evenly and doesn't have to be rinsed. This is my easy version with lots of flavor! <li style="text-align: left;">1/4 cup chopped cilantro</li>

In a large round bottom pot, with a tight fitting lid, saute the chopped ham in the olive oil for about 5 minutes, then add onions and garlic, until translucent, add pigeon peas, tomato sauce, packet of sazon, salt, oregano, cumin, olives, and bay leaf, simmer for 3 minutes until very fragrant, add rice and chopped cilantro and stir until well mixed. Add chicken broth, stir and bring to a boil, then turn the heat to the lowest setting and cover. Cook for 30 minutes.</div>

Drain and toss with butter, mustard, salt and pepper, cheese, yogurt, and can of bisque.<br />
Make sure you get a good can of lobster bisque... like Baxters, Bar Harbor, or Capt' Mariner's Seafood<br />
Cook on low for 2 1/2 hours. Enjoy...<br />

Okay, so I'm not a chef, so I definitely will research ratioes and <b>I don't have any eggs </b>right now. The eggs are for binding the mixture together, so if the mash is holding together I should be okay. I Googled Loaded Potato bites and I'm pretty spot on... so I chop the onion real fine. Crumble the bacon (mmmm bacon- Homer Simpson voice) and put everything in the bowl except the bread. <br />

I toasted the bread and put it in my mini chopper with 1/2 tsp parsley and a pinch of salt. Voila! Bread crumbs! I put a nice round scoop in the midst of the crumbs and coated generously! I then covered my pan with aluminium foil for easy clean up and put a small pat of butter on each one... what i lost in the skimmed milk I gained with the butter... Oy.</div>

First Recipe Dump Soup!Hello, my name is LuLu. I have been inspired by the program The Big Waste, starring celebrity chefs Bobby Flay, Michael Symon, Annel Burrell and Alex Guarnaschelli. They were challenged to create a gourmet meal from food that is on its way to the trash. This program both fascinated me and alarmed me. Hence comes the inspiration. There is so much unbelievable waste that goes on in this country yet, people go hungry. This bothered me. A LOT. I have always considered myself a frugal gal, but there where plenty of times where food went to waste at home. This blog is my small contribution towards a solution. Imagine if everyone did their part in wasting less in the kitchen. By using everything in the pantry, refrigerator, whatever. The key is no waste. How far could you go? This is what I had in my fridge. This is what I call my DUMP SOUP or Sopa Vaciada<br />

<li>Rotisseree Chicken Carcass (some of the meat gone but I boil it for broth)</li>
<li>4 very sad stalks of celery with leaves chopped</li>
<li>1/3 bag of organic baby carrots</li>
<li>less than half a jar of salsa (mine was hot)</li>
<li>two small onions (peeled and chopped)</li>
<li>two green onions (chopped)</li>
<li>one roma tomato (chopped)</li>
<li>one potato (chopped in little squares)</li>
<li>cilantro on its last legs (but still fragrant and green, chopped)</li>
<li> 1 packet Sazon (Spanish seasoning that comes in little packets) Optional</li>
<li>Adobo (Seasoning blend) or salt to taste</li>
<li>1/8 of a box of Angel hair pasta</li>
<li>Bay Leaf, 1/2 tspOregano, 1/2 tsp Thyme</li>

The longer you do it the more flavorful. </span></span><br />
